Deja Vu or Maybe New ~ I love the sunsets all year long. They are especially captivating in summer. "Eternity's Door" is the result of letting my imagination fly while enjoying one. I hope you enjoy it as well. ~ I admit I'm a romantic. I think "I Wonder" is a question we all ask when we love someone. I love the painting by Robert Williams. He is a California artist who really captures the magic of the ocean. ~ The beauty of God's creation is unmatched by anything man can create. "Of Thee I Sing" is a tribute to the astounding beauty all around us. This small glimpse into the Heartland of America is captured so beautifully through the lens of Gary D. Tonhouse. Enjoy!

I love making this cake, I love eating it too! I have made this over the years for every day dinner and when guests come over. It never fails. I hope you and yours will enjoy it as much as I do!

What you need:

2 1/4 cups of all-purpose flour
2 cups sugar
1 teaspoon grated lemon or orange peel
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup of dairy sour cream
1 cup margarine or butter, softened
1 teaspoon vanilla
3 eggs

Glaze
1 cup powered sugar
1-2 tablespoons of lemon juice

What you do:

Heat oven to 325 degrees.
Generously grease (using 1 tablespoon solid shortening) and lightly flour 12 cup fluted pan. *
In large bowl, blend all cake ingredients at low speed until moistened.
Pour batter into prepared pan. Bake at 325 degrees for 55-60 minutes or until a toothpick inserted in the center comes out clean.
Cool to lukewarm; invert onto serving plate. Cool completely.
In small bowl, blend glaze ingredients until smooth. Spoon over cake.

* You can also use an 8 inch springform cake pan

( This would be lovely with fresh strawberries and whipped cream!! ~ Karen)

~~ Little Egg and Ham Pies ~ Posted by Beatrice

Ingredients

1 teaspoon olive oil or butter, for lining the muffin tray
12 thin slices good quality ham
12 large eggs, preferably free-range
2 tablespoons cream
sea salt
freshly ground black pepper
4 tablespoons freshly grated parmesan

Methods:

1. Heat the oven to 180C or 350 F. or Gas 4.

2. Lightly oil or butter a 12-hole muffin tray. Line the base and most of the sides of each mould with a slice of ham, then break an egg into the hollow. Drizzle with the cream and scatter with sea salt, pepper and parmesan.

3. Bake for 15 to 20 minutes until the egg is just set and starting to shrink away from the sides of the tin.

4. Leave to cool for 5 minutes, then run a knife around each mould to loosen the ham and egg and remove to a wire tray. Eat warm or at room temperature.

(I've tried these...and I think they are a lovely breakfast when you want something special..Karen)

Inspiration ~ This poem was posted by Sandy of White Rock on my message board. I hope it touches your heart the way it did mine. You will find many beautiful inspirations left by caring souls on my board. The people who post there are pure gold. ~ Karen

Your heart is filled with pain,
Your mind cluttered with confusion.

Pieces of your life fall around you
Like raindrops in a storm.

The path you chose so long ago
Led you straight to hurts door.

Now your weary feet struggle
To find the road back home,
Searching for the places
That love and beauty hide.

Temptations lie in wait all around,
Pulling at your every step,
Waiting for you to slide back
From the chosen, sought for, path.
Emptiness surrounds you,
Confusing your perceptions.
It is difficult to carry on.

I will do my best to fill your heart with joy,
To clear the cobwebs of confusion,
Help you find your purpose.

I am good at catching pieces
And I can chase away a storm.

Let me walk your path beside you,
I have walked this road before.

You can lean on me when the weariness comes.
My shoulders are very strong.

I can not fight your battles,
Or chase away demons of the soul,
But I can lend you my strength
Until you find your own.

I will help you find the courage
To face each day anew.

I can not shorten the journey you must make,
The road is just as long as before.

But I can fill the emptiness
And help you reach your center,
The place where love and beauty hide.

Take my hand, be my friend,
Let me walk with you awhile.

Angi Eads
