Lasting Light Poetry

Hello Dear Readers ~ It's a pleasure to have this time with you. I have a new offering for you. I wrote these simple verses with the understanding that every prayer is important. I hope you find some comfort in "A Simple Prayer". The song is one of my favorites, "You'll Never Walk Alone" sung with such feeling by Gerry Marsden of Gerry and the Pacemakers. The painting is by Robert Williams, a very talented man who paints exquisite ocean scenes of California. Relax and take a look please.

Deja Vu or Maybe New ~ I wrote "Who Can Know" one night when I was feeling very helpless about a situation. There are some questions that can't be answered right away or at all. There is lovely Thomas Kinkade painting for you to enjoy on this page as well. ~ "The Spinster" is based on a true story. It is really about how even a war didn't stop the love between two people. I have added a link here regarding the Battle Somme for those of you who are interested in history. It occurred in 1916 during the First World War and 800,000 lives were lost. ~ One of the people who influenced me most in my life was my father. "Freedom to Try" was a gift he gave me. This poem may remind you of someone who influenced your life. This is a tribute to all those people in all our lives. These works are meant be to shared and I hope you enjoy sharing them as much I have enjoyed sharing them with you today.

Recipes From the Board ~ There is a flurry of activity on the Lasting Light Poetry Message Board. You will find some fantastic recipes and ideas. There is are also special recipes and helps for those of you sending packages overseas to our troops. This is one of three recipes for cookies to send to the troops. This looks yummy and not difficult to make at all. ~

~~ TUXEDO BROWNIE HUGS COOKIES ~ Posted by Beatrice

60 Hershey's Hugs chocolates
1 package {1-lb. 6.5 oz.} Original supreme brownie mix with syrup pouch
1/4 cup Hershey's Cocoa
1/4 cup water
1/4 cup vegetable oil
2 eggs

Remove wrappers from Hugs.
Heat oven to 350°.
Grease and flour cookie sheet or line with parchment paper. Stir brownie mix, pouch of Hershey's Syrup, cocoa, water, oil and eggs in medium bowl until blended.
Drop by spoon onto prepared cookie sheet.
Bake 8 minutes or until set. Cool 1 minute.
Press Kiss into center of each cookie.
Remove from cookie sheet to wire rack.
About 5 dozen cookies.

(NOTE: This recipe is for 2 people)

~~ LAZY LASAGNA
1 cup spaghetti sauce
1/2 cup cottage cheese
3/4 cup shredded mozzarella cheese
1-1/2 cups cooked wide noodles
2 tablespoons grated Parmesan cheese
Warm the spaghetti sauce; stir in cottage cheese and mozzarella. Fold in noodles. Pour into two greased 2-cup casseroles. Sprinkle with Parmesan cheese. Bake, uncovered, at 375 degrees for 20 minutes or until bubbly.
Yield: 2 servings.

~~ CHEESE BREAD
1 Italian-style roll (6 inches)
1 tablespoon butter or margarine, melted
1 garlic clove, minced
1 tablespoon grated Parmesan cheese
Cut roll in half lengthwise. Combine butter, garlic and cheese; spread on the cut sides of roll. Broil 4 in. from the heat for 2-3 minutes, or microwave on high for 20-30 seconds, or until cheese melts.
Yield: 2 servings.

~~ Cheddar Creamed Eggs On Toast (M family loves this) ~ Posted by Linda

4 slices bacon
6 hard boiled eggs, peeled and sliced
1 medium onion, chopped
1 1/2 cups sharp cheddar cheese
3 tablespoons all-purpose flour
1 1/2 cups milk
4 slices toast

Cook bacon until crisp; drain on paper towels; crumble and set aside.
Meanwhile, prepare hard boiled eggs. (This can be done the night before and refrigerated.)
Drain all but 1 to 2 tablespoons drippings from skillet. Sauté onion in remaining drippings.
Combine cheese with the flour and add to onion in skillet. Add milk and stir over medium heat until mixture thickens.
Fold in eggs and crumbled bacon. Serve over toast.
Serves 4

Note from Karen ~ Spring has finally arrived. My flowers are blooming like mad and the color show is one I've waited all winter to see. The days are warmer where I live and it's so nice to have more hours of daylight. ~ I know all of us are affected by the war going on in Iraq. I offer my support and heartfelt prayers to all those serving and their families and friends. This is a very difficult time for us all. I can only say it is more important now than it has ever been for us to show tolerance and kindness to each other. Many are full of anxiety and fear. You know how I love quotes, and I'll share this one with you in closing: "Friendship make prosperity more shining and lessens adversity by dividing and sharing it" ~ Cicero. There is some ancient wisdom that rings true. ~ Thank you for sharing this time with me. Lasting Light is still a place to relax and find some comfort. At the end of the day there is nothing for us to control but our own selves and our own attitudes. I would like to leave you with these beautiful lyrics to a song by Beth Neilsen Chapman. I haven't heard the song, but I ran across these lyrics and they rang true to me. ~
