Lasting Light Poetry

August 8, 2002

Hello Again! Happy August to you all. I have a brand new poem this time to share with you. It's called "Eternity's Door" and there is a fantastic photograph by Randolph Wang of a place I've been. Point Reyes, California. Let the music carry you along. Please have a look.

Deja Vu or Maybe New ~ The sweet joys of sitting on the porch with a friend is the focus of "Together". ~ "Waking Dream" remains one of my personal favorites. On a beautiful summer's night with stars all around, it's the perfect place to spin a dream or two. ~ On a day when life gets me down, there is Someone I turn to. I can always find "Consolation" in my time with Him. I hope you will too. I absolutely love the watercolor here by Chunk Schenk. Join me and let these pages soothe you this summer's day or night. Have a look.

Recipes from the Board ~ Here is a sampling of some delicious and often very simple recipes posted at Lasting Light Message Board. If you need some inspiration in your cooking you'll find it there. Here are a few recipes to tempt you, and please don't hesitate to post your favorites! Okay, ladies and gents......Let's cook!

~~ Baked Cinnamon French Toast ~ Posted by Joni

This is the easiest and tastiest French toast I have ever had! I like mine with powdered sugar on top. Enjoy!

Cooking spray
6 slices bread (white, 7 whole grain or raisin)
1 tsp ground cinnamon
3 eggs
1/2 cup milk
1/2 cup maple or table syrup
2 tablespoons butter or margarine, melted
1 teaspoon vanilla extract
Fruit, for garnish (optional)

Spray a 13 by 9-inch baking dish with cooking spray. Arrange bread slices to fit in single layer in dish; sprinkle with cinnamon. In a bowl, beat eggs with milk, syrup, butter and vanilla just until blended. Pour evenly over bread. Bake immediately or cover and refrigerate several hours or overnight. Preheat oven to 350 degrees. Bake uncovered 30 minutes or until firm to the touch. Garnish with fruit. Serve hot, with additional syrup.

Makes 6 servings.
(This looks perfect for a special breakfast on the patio some lazy morning.)

Summer Snack ~ Posted by Hugs for the Heart Newsletter

~~ Honey Milk Balls
(Makes 24 cookies)

1/2 cup honey
1/2 cup peanut butter
1 cup nonfat dry milk solids
1 cup uncooked quick oats (not instant or regular)

Measure 1/2 cup honey and 1/2 cup peanut butter into a bowl. Add and stir in 1 cup nonfat dry milk and 1 cup oatmeal. Use spoon to divide the mixture into 24 balls on a sheet of waxed paper or a clean plate. Shape each spoonful into a round ball between your hands. Place balls on a plate to serve. Tastes great along with a cold glass of milk.

(I'm thinking this would be fun to let the kids make some afternoon!)

1 chuck or rump roast
1/2 c. water
2 lbs onions, sliced
salt and pepper to taste
1/2 c. Canadian bacon
1/2c. tomatoes, diced with juice
2 stalks celery, chopped
1 lb. favorite pasta
1/2 c. white wine
parmesan cheese, grated

Place all ingredients, except pasta, in a large pot.
Cook covered, over low flame for 2-3 hours.
During the last 45 minutes, remove lid and continue to simmer.
Remove meat from sauce and serve as second course.
Cook pasta according to instructions and drain.
Add a few ladles of sauce to pasta and mix well.
Serve, topped with another ladle of sauce,
and garnish with a small amount of parmesan cheese.
Serves 4-6
( A nice dinner to have simmering away on the stove for family or company.)

Note from Karen ~ It's so good to be back with you all again. We are more than halfway through summer now. August is the only month without a holiday, but how about creating one of your own? Celebrate yourself, your family, or whatever is close to your heart. Turn off the television for a day and take a short drive or walk for a little exploring. There are wonders all around you if you only have eyes to see them. I saw a small wonder out my kitchen window. My hummingbird was flying in place studying the spinning whirligig I had stuck in a pot. The red and silver colors caught his eye and I'm sure he thought it was the most amazing flower he'd ever seen. His good sense told him there certainly was no nectar there! ~ Thanks again for your letters and guestbook signings. Encouragement is like helps to keep us going. Shine on.......Karen

Quotes ~ These were posted by Joni on the Lasting Light Message Board. I loved them, and think you will too.
Thanks Joni!

"May the sun bring you new energies by day, may the moon softly
restore you by night, may the rain wash away any worries you may have.
May gentle breezes refresh your soul and all the days of your life,
may you walk gently through the world and know its beauty."

"I believe in the sun even though it is slow in rising. I believe in
you without realizing. I believe in rain though there are no clouds in
the sky. I believe in truth even though people lie. I believe in peace
though sometimes I am violent. I believe in God even though he is silent."

"Nature is the glass reflecting God, as by the sea reflected is the
sun, too glorious to be gazed on in his sphere."
- Young (1683-1765)

"May the road rise to meet you. May the wind always be at your back.
May the sun shine warm upon your face, the rains fall soft upon your
fields and, until we meet again, may God hold you in the palm of his hand."
- Irish Blessing

"May God grant you always... - A sunbeam to warm you, - A moonbeam to
charm you, - A sheltering angel, so nothing can harm you. - Laughter
to cheer you, - Faithful friends near you. - And whenever you pray, -
Heaven to hear you."
- Celtic Blessing

"If you cry because the sun has gone out of your life, your tears will
prevent you from seeing the stars."
- Rabindranath Tagore

"Anyone who thinks sunshine is happiness has never danced in the rain."
- Unknown

"Courage is sometimes frail as hope is frail: a fragile shoot between
two stones that grows brave toward the sun though warmth and
brightness fail, striving and faith the only strength it knows." -
- Frances Rodman

"The dark moment the caterpillar calls the end of the world is the
sun-filled moment the butterfly calls the beginning."

Finally ~ A scripture to ponder...............

Philippians 4:8 “Finally, brethren, whatsoever things are true, whatsoever things are honest, whatsoever things are just, whatsoever things are pure, whatsoever things are lovely, whatsoever things are of good report; if there be any virtue, and if there be any praise, think on these things.”

Until next time.......Be safe.......Be well......Share a smile.....See you soon! ~ Karen
