Welcome! It's nice to have some time to spend with you again. Winter is still having her say in some areas, but eventually Spring is going to overrule this cold weather. Please take a moment and relax with me. I want to thank those of you who have tried to sign my guestbook during the past week. The guestbook is now working for those that wish to leave their comments.

I really miss hearing from new and old friends. A very warm thanks to all of you who are using and viewing the message board at Lasting Light Poetry. I am sorry for the popups on that page, but they are NOT mine, and I have no control or affiliation with the sponsors or any ads on the board itself. I do apologize for this inconveninece, but hope you will check out the lovely recipes, poems, and sharing that you will find there. You DON'T have to leave your email address. Recipes and Remembrances~ Here are some wonderful recipes for you to enjoy. Easter is coming soon. If you have any special remembrances or recipes, please send them along. I have many happy memories of Easter egg hunts and lovely Easter baskets and such. All ideas and sharing are welcome. Let's cook!

~~ Artichoke Heart and Pasta Casserole

1 lb Tiny shell noodles
1 Shallot, minced
4 Green onions, chopped,-including green tops
2 tb Butter
1 c Chicken stock
1/2 c Dry white wine
1/4 c Marsala or Madeira
3/4 c Cream
1/2 c Grated Gruyere or other-Swiss cheese
1/2 lb Crab meat
2 Jars marinated artichoke-hearts, cut in half
1/2 c Chopped flat-leaf parsley
Salt and pepper to taste
1/4 c Grated Parmesan
2 tb Bread crumbs

Cook shell noodles in large pot of boiling water until tender. Drain. Melt butter and saute shallot and green onions until soft. Add chicken stock and white wine. Reduce by half. Stir in Madeira and bring to a boil, Stir in cream and cook until just thickened.Add cheese to sauce.

Combine sauce with pasta and stir in crab and artichoke hearts. Add parsley and salt and pepper to taste. Butter a ceramic casserole and put pasta mixture into it. Preheat oven to 350 degrees F. Top casserole with grated Parmesan and breadcrumbs and bake 30 to 40 minutes, until heated through and bubbling.

~~ Easter Bonnets~ This makes a dozen bonnets~

1 (18-oz.) pkg. Pillsbury® Refrigerated Sugar Cookies
12 purchased lemon or orange mini muffins
2 cups vanilla frosting (from two 16-oz. cans)
Green and red food color

Directions:

1. Using slice and bake method, bake and cool 12 cookies as directed on cookie wrapper. Reserve remaining dough for a later use.
2. If necessary, remove papers from muffins. Cut 3/4-inch slice off bottom of each muffin to use for bonnet. Reserve muffin tops for snacking. Spread cut side of each muffin bottom with frosting; attach to cookie, frosting side down. Place bonnets on rack set over 15x10x1-inch baking pan.
3. Place 1/2 cup frosting in resealable plastic bag. Add green food color; squeeze bag until well mixed and of desired color.
4. Place remaining frosting in microwave-safe measuring cup with pouring spout. Microwave on HIGH for 30 to 40 seconds or until pourable. DO NOT BOIL. Stir in enough red food color for desired pink color.
5. Pour pink frosting over bonnets in circular motion to cover completely. Reheat frosting as needed to keep it pourable. Let stand 10 minutes or until set.
6. Remove bonnets from rack with small spatula, smoothing edges of frosting. Cut tiny hole in corner of bag with green frosting. Pipe ribbon of frosting for hatband; add bow design. Make dots and flower designs on each hat as desired.

~~ Easy Creamy Scalloped Potatoes and Ham Supper (Serves 4)

Ingredients:

3 1/2 cups water
1 (7.8-oz.) pkg. sour cream and chives potato mix
1 cup milk
2 cups cubed cooked ham or smoked turkey
2 cups frozen mixed vegetables, thawed
1 teaspoon prepared mustard

Directions:

1. Bring water to a boil in large saucepan over high heat. Stir in potato slices, reserving sauce packet. Boil 15 minutes. 2. Stir in milk, contents of sauce packet from potatoes, ham, vegetables and mustard. Reduce heat to medium; cook and stir 4 to 5 minutes or until mixture is thoroughly heated and sauce is of desired consistency.

~~ Cucumber and Tomato Salad Caprese
6 Servings (15 minutes to make this yummy Salad)

Ingredients:

1 large red tomato, sliced
1 large yellow tomato, sliced
1 medium cucumber, sliced
8 oz. fresh mozzarella cheese, sliced
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup coarsely chopped fresh basil or lemon basil

Directions:

1. On large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.
2. In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil

~~ Cherry Fruit Punch (Adults and kids love this!)
31 (1-cup) servings

Ingredients:

1 (3-oz.) pkg. cherry flavor gelatin
1 cup boiling water
1 (46-oz.) can pineapple juice, chilled
1 quart (4 cups) apple cider, chilled
1/4 cup lemon juice
1 (1-liter) bottle ginger ale, chilled

Directions:

1. In 3-quart pitcher or bowl, combine gelatin and boiling water; stir until gelatin is dissolved. Stir in pineapple juice, apple cider and lemon juice. If desired, refrigerate until serving time.
2. Just before serving, pour mixture into punch bowl. Gently stir in ginger ale.

EASTER EGG STORAGE: Easter eggs that are used in baskets or for egg hunts are safe to eat if they have not been outside the refrigerator for more than 2 hours. Always discard the eggs that have become cracked or dirty. Hard cooked Easter eggs can be safely stored in the refrigerator for 7 to 10 days. Source: University of Minnesota Extension Service

~~ Passover Chocolate Torte

This is yet another one of Chaya Stein's recipe, so you know it's good.

Chaya: "I once found this recipe in the Good Housekeeping; it didn't have any flour so I made it for Pesach. It's delicious, but very rich."

You will need:

16 oz. pkg. chocolate chips (melted)
5 large eggs, separated
1/4 cup confectionary sugar
1 T. vanilla
1/2 cup margarine
cocoa (powdered)

Preheat oven to 250 degrees. Grease springform pan and dust with cocoa. Melt chocolate with margarine. In a large bowl mix egg yolks and vanilla with a fork. Slowly beat warm melted chocolate into yolks until blended. In small bowl beat whites until stiff, and slowly add confectionary sugar. Fold whites into chocolate mixture 1/3 at a time.

Bake for 1 hour until toothpick thrust into top of torte comes out almost clean. Cool torte in pan. Cut into 12 wedges. Alternating, dust every other wedge with cocoa and then confectionary sugar. Garnish with raspberries. Yum.
