Deja Vu or Maybe New ~ Memories of the country inspired another walk. I hope it brings back a good memory for you. "Country Stroll " is about the simple pleasures of a warm day with a friend. Are you a romantic? Well, I guess I am. "The Spinster" is based on a true story told to me by a friend. It's about another time, but it's a timeless tale of the power of love. "Of Thee I Sing" is part of a triology I wrote about the Praries and I wanted to share this beauty with you. Enjoy!

~~ 4th of July Lemon Bar Flags ~ Posted by Heart

The color scheme is perfect for 4th of July Celebrations, but they're so delicious, you'll probably want to serve them all summer long.

* Shortbread Crust
1/2 cup (1 stick) butter , softened
1/2 cup firmly packed light-brown sugar
1 1/2 cups all purpose flour
1 teaspoon grated lemon rind

* Lemon Filling
1 1/2 cups sugar
1/2 cup lemon juice
1/2 cup water
2 tablespoons cornstarch
2 eggs
2 teaspoons grated lemon zest

* Toppings
1/4 cup confectioners sugar
1/4 cup blueberries
1 tube red gel frosting

* Heat the oven to 350°F. Grease a 9-inch square baking pan.

Prepare the shortbread crust: In a large bowl, with an electric mixer on medium speed, beat the butter and brown sugar until light and fluffy. Reduce the mixer speed low, and beat in the flour and lemon rind until well combined; pat the mixture evenly into the prepared pan. Bake the crust 15 minutes, or until golden. Cool the crust in the pan on a wire rack.

Meanwhile, prepare the Lemon Filling: In a 2-quart saucepan, mix 1 cup granulated sugar, the lemon juice, water, and cornstarch until well combined. Heat the mixture to boiling over medium-high heat, stirring constantly; cook 1 to 2 minutes longer or until the mixture thickens. Remove from the heat.

In a medium-size bowl, with a wire whisk, beat the remaining 1/2 cup granulated sugar, eggs and the lemon rind until thick and lemon colored. Slowly beat the lemon mixture into the egg mixture until well combined. Pour the filling into the prepared crust.

Bake the cookies 15 to 20 minutes, or until the filling is firm. Cool the cookies completely in the pan on a wire rack.

Cut the cookies into 6 rectangular bars. Place the bars on a serving plate. Sprinkle confectioners sugar over the cookies. Create stripes across the bars with the red gel frosting. Place 6 blueberries in the top corner of each bar.

~~ George's Elegant Oven-Baked Scrambled Eggs ~ Posted by George
(Serves 12)

Ingredients
12 oz. Lite Cream Cheese
3/4 c. Half & Half
3 Tbl. melted butter
12 large eggs, lightly beaten
1-1/2 Tbl. chopped fresh parsley
1-1/2 oz. cream sherry
Salt & pepper to taste

Preparation
Place cream cheese in a 4-cup glass measuring cup and soften in microwave, about 3 minutes on low/defrost.
Add half & half and blend.
Return to microwave for about 3 more minutes on low just until mixture is warm.
Pour melted butter in 3-quart glass baking dish which has been sprayed with no-stick pan coating.
Add eggs, cream cheese mixture, parsley and sherry.
Bake 20 minutes at 350 degrees, stirring after the first 5 minutes to help eggs set.
After eggs have cooked 20 minutes total, cook eggs under broiler approximately 2 minutes or until they are lightly browned.
Then bake eggs at 350 degrees for an additional 5 minutes. Remove from oven and allow to cool at least 5 minutes before cutting.
Cut into rectangles - 4 rows of 3 pieces each.

~~ Watergate Salad ~ Posted by Joni

2 boxes pistachio pudding mix
1 large can crushed pineapple
12 oz. Cool Whip
1/2 cup maraschino cherries, chopped
1 cup miniature marshmallows
1 cup pecans, chopped

Mix dry pudding mix & crushed pineapple (juice & all). Add remaining ingredients. Mix well. Refrigerate several hours before serving

~~ Mexican Meatballs ~ Posted by Joni

1 lb. ground beef
1.25 oz. envelope taco seasoning mix
1 egg
1/2 cup plain bread crumbs
16 oz. jar salsa
14.5 oz. can diced tomatoes; undrained*
15 oz. can kidney beans; rinsed, drained

Combine ground beef, 1/2 taco seasoning, 1/2 cup salsa, bread crumbs and egg. Shape mixture into 1 1/2-inch meatballs. Brown meatballs. Place meatballs in crockpot. Pour remaining salsa, taco seasoning, and tomatoes over meatballs. Cover and cook on LOW for 4 to 5 hours.

30 minutes before serving, stir in kidney beans. Cover, turn crockpot setting to HIGH and cook an additional 30 minutes until heated through.

Note: *May use diced tomatoes with green chilies added, if desired

A Note From Karen ~ Happy Summer! It's finally officially here. I am in good spirits and want to thank those of you who took time to write. I think my readers are the most caring people around. ~ Do take some time to relax and enjoy these long days. If you've never made homemade ice cream, now is the perfect time.
