Hello Again! It's been a while, and I'm glad to share a brand new poem with you. There are so many things that bind us together. I have named a few of them in this new offering, "The Thread". Have a look!

Deja Vu or Maybe New ~ "Passing Things" is about moving on with our lives. It's about saying good-bye and starting over. I really love the painting on "Don't Forget" as well as the song. It's about love and longing. There are days when we simply need a friend. I love Catmandrew's watercolors of cats, and I think you'll enjoy this last offering, "On Those Days". Check it out!

Recipes From The Board ~ Oh my...we have so many fantastic things cooking at Lasting Light Message Board. Here are a few samples of the recipes you'll find there. Let's cook!

~~ Two Corn Casserole ~ Posted by Betty C.

People will think you slaved over this. It's fairly simple to make, and quite enjoyable!

Ingredients:
1 small can of whole kernel corn
1 small can of cream style corn
1 stick of butter (melted)
1 box Jiffy cornbread mix
3 eggs
1 package of shredded cheese
1 small onion finely chopped (sautéed in skillet for 1 or 2 min.)

Preparation:
Place all ingredients in a bowl stir well. Pour mixture into a baking dish and bake at 350 for 40-45 min.

~~ MARINATED BLUEBERRIES AND TROPICAL FRUITS ~ Posted by Joni

1/4 cup firmly-packed light brown sugar
1/2 cup orange juice
2 tablespoons orange liqueur (optional)
2 cups fresh blueberries
2 cups fresh or canned pineapple chunks
1 mango, peeled, pitted and cubed (about 1-1/2 cups)
1 kiwifruit, peeled, halved lengthwise and thinly sliced (about 1/2 cup)

In a microwaveable bowl, combine brown sugar, orange juice and orange liqueur, if desired. Microwave on high 1 minute. Stir until sugar is completely dissolved. Or, in a medium saucepan combine sugar, orange juice and orange liqueur. Cook and stir over very low heat until sugar is dissolved. In a large bowl, combine blueberries, pineapple, mango and kiwi. Stir in sugar-orange juice mixture until blended. Serve alone, as a dessert or over sorbet, sponge cake or frozen yogurt.

Yield: about 6 cups Per 1/2 cup portion: 84 calories, 1 g protein, 20 g carbohydrate

Tested in a 625 watt microwave oven
Note: This looks so refreshing for a summer evening!

~~ Quick Spinach Quiche

Ingredients:
1 package (10 oz) frozen chopped spinach
1 tablespoon butter
1/4 cup finely chopped onion
1-2 cloves minced garlic
1 cup small curd creamed cottage cheese
1 cup milk
1/2 cup biscuit mix
3 eggs
1 teaspoon lemon juice
salt and pepper to taste
1/2 cup grated Italian blend cheese
ground nutmeg
1-2 tablespoons grated Parmesan cheese

Method:
Thaw spinach in microwave. Place in strainer and squeeze out excess liquid. Set aside.

Melt butter in frying pan. Add onion and garlic, sauté until onion is cooked. Add drained spinach and mix well.

Spread 1/2 cup cottage cheese in bottom of a 9" greased pie plate. Add spinach mix. Top with 1/2 cup cottage cheese. Sprinkle Italian cheese blend on top. Mix together milk, biscuit mix, eggs, lemon juice, and salt and pepper. Pour mixture over ingredients in pie plate. Sprinkle with grated nutmeg. Bake at 350 degrees for 30-40 minutes or until knife inserted in center comes out clean. Allow to stand 10 minutes before cutting. Top with grated Parmesan cheese, garnish with a sprig of fresh parsley or other herbs. Serve warm with fresh fruit.

Serves 4-6

~~ No-Bake Peanut Squares ~ Posted by Beatrice

1 c Light corn syrup
1 c White sugar
1 c Peanut butter
4 c Corn flakes
4 c Cherrios
1 c Peanuts

In a 2 qt. pan melt together just until smooth the first three ingredients, stirring constantly. Do not boil. (Warning: Don't use glass pan on top of electric stove!) Remove from heat. Measure the last three ingredients into a large bowl. Pour over peanut butter mixture. Stir, coating cereal and nuts. Spread into buttered large pan. Cut into squares. Press down

(These look great for a treat without heating up the kitchen.)

Note From Karen ~ Hello again. Some of you have written and were wondering where my newsletter was. Well, I've been taking a bit of a break this summer. I hope you are enjoying your summer as well. Those gorgeous sunsets and trips to the shore are moments we'll remember when winter arrives. How about just loading up family or friends into the car and going for a drive? SPECIAL ~ Here is a very special recipe posted on the Lasting Light Message Board by Beatrice. I know I will refer to it often. :-)

"AN IRISH RECIPE FOR FOREVER"

Gather all of the ingredients together, So that they are close at hand!
Get a clean cloth and wipe the bowl clean of any lingering *dust* from the past.

Take MATURITY, RESPECT, and FRIENDSHIP, and stir gently.
Add unlimited amounts of COMPASSION and KINDNESS,
And mix well.

To this, add CARING by the handfuls, and fold in TRUST.
Continue stirring gently, adding LISTENING, HONESTY, and large amounts of COMMUNICATION.

Slip in some DREAMS, GOALS,
And firm pieces of KEEPING PROMISES.

Bake in a home filled with PEACE, BEAUTY, and SERENITY.
Before you taste the finished product, sprinkle liberally with PATIENCE, LOVE, and a touch of SPICE.

Serve very hot, with IMAGINATION on the side.
