Happy Thanksgiving Everyone! I don't have a new poem for you, but I did want to share some you might enjoy. I know many of you have read "The Recipe Book", but if you haven't I hope you'll take a look. It is actually a true story from my own life. ~ Many of you will be donating your time to serve others this Thanksgiving, and this poem is for you. Have a look at "Caring Hearts". ~ "Gratitude" was written to remind me of the many things I have to be thankful for. I hope you enjoy it. ~

~~ Sensational Double Layer Pumpkin Pie ~ Posted by Beatrice

4 Ounces cream cheese, softened
1 tablespoon milk or half and half
1 tablespoon sugar
1 1/2 cups whipped cream topping
1 graham cracker crust
1 cup cold milk or half and half
2 small vanilla flavored instant pudding packages
1 can pumpkin pie filling -- (16 oz)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 Teaspoon ground cloves

Beat cream cheese, 1 tablespoon of milk, and sugar with wire whisk until smooth.
Gently stir in the whipped cream topping.
Spread on bottom of graham cracker crust.
Pour 1 cup milk into bowl, add pudding mix.
Beat with wire whisk for one to two minutes--mixture will be thick.
Stir in pumpkin and spices with wire whisk. Mix well. Spread over cream cheese layer.
Refrigerate four hours, or until set.

Note: This recipe would knock their socks off! Looks fabulous.

~~ Sausage-Cornbread Dressing ~ Posted by Anna

1 lb. ground pork sausage
2 medium onions, chopped
4 stalks celery, chopped
6 c. crumbled cornbread
3 c. white bread cubes, toasted
2 tsp. rubbed sage
1/4 tsp. salt, (optional)
1 tsp. pepper
4 c. turkey broth
2 large eggs, lightly beaten

1. Combine sausage, onion and celery in a large skillet, cook over medium heat, stirring until sausage crumbles. Drain well.

2. Combine cornbread and next 4 ingredients in a large bowl; stir in sausage mixture. Add broth and eggs, stirring well. Spoon into a lightly greased 13x9x2-in. baking dish.

3. Bake at 350 degrees for 45 minutes or until browned

~~ Sherried Turkey Casserole

1 (10-3/4-ounce) can condensed cream of celery soup*
1 cup milk
1/4 cup grated Parmesan cheese
3 tablespoons dry sherry
3 cups hot cooked rice
1 cup finely diced cooked turkey
1/2 cup chopped green pepper
1 (2-ounce) jar diced pimientos, drained
Paprika

Combine soup, milk, cheese and sherry in large skillet. Cook over medium heat 2 to 3 minutes. Add rice, turkey, pepper and pimientos. Continue to cook until thoroughly heated. Sprinkle with paprika before serving. Makes 6 servings.

*Substitute homemade white sauce or cream of chicken soup

Note: This is an original way to use up the extra turkey.

~~ Pistachio Salad

1 can crushed pineapple (with juice) -- 20 ounce can
1 box Pistachio instant pudding -- 3 ounce
1 cup mini-marshmallows
1 container cool whip -- 9 ounce

Stir together pineapple and instant pudding. Add marshmallows; stir in Cool Whip. chill

Note: As simple as this is, it's always a favorite!
