Dear Friends~ I'd like to share a new poem. It is intensely personal, but I'm thinking there probably isn't anyone out there who cannot relate to it. It is a poem about timeless love, and a tribute to a key person in my life, my father. I invite you take a moment to reflect with me. ~ Karen

Recipes and Remembrances~ Enjoy these delicious recipes that might just bring back memories or make new ones. Let's cook!

~~ Walnut Chicken

1/4 cup soy sauce
1 tablespoon dry sherry
1/2 teaspoon ground ginger
1 pound boneless chicken breasts, cut into 1-inch pieces
5 tablespoons vegetable oil
1/3 cup sliced green onions
1 clove garlic, halved
1 cup walnuts, coarsely chopped.

Combine soy sauce, sherry and ginger in a medium sized bowl; add chicken pieces; let stand 15 minutes. Meanwhile heat wok or large skillet; add 3 tablespoons of the oil; heat until smoking; add green onion, garlic and walnuts. Cook 3 minutes, tossing mixture with slotted spoon; discard garlic halves; remove walnut-onion mixture to small bowl. Add remaining oil to wok; heat; add chicken pieces and soy mixture. Stir-fry until chicken is done and soy mixture begins to coat the chicken, about 5 minutes.

Add walnut-onion mixture and toss together. Serve with hot steamed rice if you wish. Makes 4 servings.

~~ Spinach Mimosa ~ Serves 4 (thanks Sue Z.)

2 packages (10 ounces each) frozen chopped spinach
1 tablespoon all purpose flour
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup water
1 hard-cooked egg, shelled

Place the blocks of frozen spinach side by side, in a medium -sized skillet. Sprinkle with flour, salt and nutmeg. Pour in the water. Heat slowly, breaking up spinach with a fork, just until thawed, then cook until the mixture thickens and bubbles. (about 3 minutes).

Spoon into mounds on serving plates; press the hard-cooked egg through a sieve or chop finely. Garnish on top with a carrot curl if you like. This is a fast and low calorie dish my family likes a lot.

~~ Tutti-Frutti Parfaits~ Makes 6
(This is fun to serve and eat for kids of all ages.)

1 can (1 pound) fruit cocktail, drained
1 cup miniature marshmallows
1 carton (8 ounces) dairy sour cream
6 cup-shaped ice cream cones

Combine fruit cocktail, marshmallows, and sour cream in bowl. Stir this a little just to mix. Spoon into ice cream cones and freeze for several hours, or until firm. You can use other canned fruits if you want, and be sure to drain the juice to use in jello.

~~ Almond Scones (yummy Easter treat)
Makes 10 Scones~

3 Cups All Purpose Flour
2 1/2 Tbsp. Baking Powder
1/2 Cup Sugar
1/2 teas. Salt
1/2 Cup Sweet Butter
1 Tbsp. Almond Extract
2 Cups Half & Half

Mix all dry ingredients. Cut in 1/2 cup sweet butter until coarse, do not over mix. Add almond extract and mix in 2 cups of half & half. Form a round shape on floured surface with rolling pin with thickness of about 1 1/2 inches. Use cutter to make 8 - 10 scones. Place on a baking sheet, brush with milk, sprinkle sugar and add sliced almonds. Bake at 350 degrees for approximately 20 - 30 minutes, or until golden in color.

~~ Maple Baked Ham (An easter favorite for my family.)
Serves 10-12

One-half boneless precooked smoked ham (appox. 5 pounds)
1 Cup maple syrup for each 5 pounds of ham
1/4 cup all-purpose flour
1 Cup water
1/2 teaspoon powdered mustard
2 teaspoons Worcestershire sauce
Maple extract (optional)

Preheat oven to 325 degrees. Place the ham fat side up on a rack in a shallow roasting pan. Do not cover or add water. Insert a meat thermometer and bake the ham. (For a precooked ham, the internal temperature should be 130 degrees when finished). When the ham is about half baked, approximately 45 minutes, pour the pan juices into a medium saucepan.

Skim off excess fat and set the drippings aside. Pour the maple syrup over the ham, and return to the oven. Occasionally baste the ham with the syrup from the pan while it finishes baking; the total cooking time for a 5 pound precooked ham is about 1 1/2 to 1 3/4 hours.

To make the sauce, remove the ham from the pan and set aside on a carving board. With a whisk, blend the flour into the reserved drippings in the saucepan. Add the water, mustard, Worcestershire sauce, and maple syrup drippings from the roasting pan and combine. Add a bit of maple extract if desired. Bring to boil, stirring constantly, then remove from the heat and keep warm. Carve the ham into thin slices. Pour the hot maple sauce into a gravy boat and pass with the ham.

~~ Lemon Tarts (really easy and soooo good!!!)

1 8-ounce package of cream cheese
1 4-serving pack of jello lemon gelatin
1/2 cup cool whip
1 6-ounce keebler graham cracker crusts (6 servings ones)
6 tablespoons fruit spreadable any flavor

In bowl stir cream cheese with spoon till soft. Add gelatin dry, then add cool whip. Continue stirring until well blended. Spread mixture into graham cracker crusts. spread 1 tablespoon fruit over top of each. Refrigerate for at least 15 minutes.

~~ Potluck Rice Pilaf
(For a crowd, this is great to share~Angie)

1/2 cup butter or margarine
4 cups uncooked long grain rice
2 quarts water
2 tablespoons chicken bouillon granules
10 green onions, thinly sliced
2/3 cup soy sauce
1 cup slivered almonds, toasted

In Dutch oven, melt butter. Add rice and saute for 3-5 minutes until lightly browned. Add water and bouillon. Bring to boil. Reduce heat, cover and simmer for 15-20 minutes or until rice is tender. Remove from heat; stir in onions and soy sauce. Cover and let stand for 5 minutes. Stir in almonds. Serve 20-22.
