Hello Again! ~ I have a brand new poem to start off a brand new year. It is about the magic of believing. The painting by Sandra Kuck is so beautiful. Please have a look at "Believe In Me". ~

Deja Vu or Maybe New ~ "Unchanging Love" is a quiet sort of poem and I especially love the painting by Chuck Schenk. It is a comfort to know there are some things we can always on. ~ Remember those summer evenings? "You and I" is a lovely vignette of moments well spent. I hope it brings a warm memory to your mind. ~ Thomas Kinkade fans will enjoy this painting I used for "Power of A Woman". As this New Year commences...I hope it will remind you of the resources that you may have forgotten you possess. This is also a tribute to women everywhere. ~ Please take a moment to relax and enjoy these poems. ~

Recipes From The Board ~ I know we've all enjoyed many special treats over the holidays. The wonderful cooks who post their recipes have left some delicious ideas for you. Here is a sampling. A link to the Lasting Light Message Board will be in this newsletter for those of you who have never had a visit. It's a place you might learn to love. Let's cook!

~~ Crockpot Black-eyed Peas ~ Posted by Sally

1 16 oz bag of dried black-eyed peas
1 small ham hock
1 14 1/2 oz can of diced tomatoes with jalapenos
1 14 1/2 oz can of diced tomatoes with mild green chiles
2 10 1/2 oz cans of chicken broth
1 stalk of celery, chopped
salt and pepper to taste (it doesn't need much, if any)

Pre-soak black-eyed peas according to the instructions on the bag. Combine all ingredients and cook on low for 8-10 hours.

Serve on New Years Day for good luck!

Note....I think you can have these anytime in January for good luck. They are delicious!



1 lb. tenderloin tips (beef, pork, whatever)
1 can mushroom soup
1 pkg. onion soup mix
1/4 c. water
Combine ingredients in crock pot. Cook 8 hours. Serve over noodles.

Note: Something good simmering away can chase the blues away. *Smile*


~~ CHEDDAR APPLE PIE ~ Posted by Sharon

1 1/4 cups flour
1 teaspoon salt
1/2 cup shortening
1 cup shredded Cheddar Cheese
1/4 cup ice water

1/2 cup brown sugar, packed
1/2 cup sugar
1/3 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup butter, softened
4 med. apples
2 tablespoons lemon juice
1/2 cup cheddar cheese

Preheat oven to 375. Combine flour with salt, cut in shortening until crumbly. Add cheese. Sprinkle water over mixture gradually. Shape into a ball with lightly floured hands. Roll dough out and place in a greased pie plate.

Combine sugars, flour, spices and salt. Sprinkle half of this mixture over pastry. Cut butter into remaining topping mixture until crumbly. Arrange sliced apples on crust. Sprinkle with lemon juice and cheese. Sprinkle with remaining topping mixture. Bake 35 - 40 minutes and serve with Cool Whip or Whipped Cream! Enjoy!


~~ Chicken Rice Casserole

1 can cream of chicken soup
1 cup water
3/4 cup rice (uncooked )
1/4 teaspoon paprika
1/4 teaspoon pepper

Mix all the above and pour into greased casserole.
Place four boneless chicken breasts on top of rice mixture.
Sprinkle with more paprika.
Bake at 375 degrees for 45 minutes or until done.
