Welcome Back! I'm enjoying a nice cup of tea and ready for a visit. It's good to see you again, and have a little time together. First, I have a new poem quite appropriate for Valentine's Day. Have a look!

~~ WHITE PIZZA DIP

1 cup Ricotta cheese
1 cup shredded mozzarella cheese
1 (16 oz) container sour cream
1/2 c. finely-chopped pepperoni
1 envelope Lipton Savory Herb & Garlic mix (dry)

Mix together and place in baking dish.
Sprinkle with 1/4 cup shredded mozzarella.
Bake at 350 degrees for 30 minutes.
Serve warm with bagel chips, french bread, or crackers.

~~ Tortilla Pinwheels

Serves 50 Pieces

1 Lb cream cheese
1 Lb ham or turkey chopped
8 oz canned, chopped green chilis
8 oz chopped black olives
1 pkg. 12 medium sized flour tortillas

Blend cream cheese, meat, chilis and olives together. Spread evenly on the tortillas. Roll the tortillas jellyroll style and refrigerate at least 4 hours or all day covered with plastic wrap and a damp cloth. Slice into 1/2 inch slices. Serve immediately with your favorite salsas.

~~ Impossible Greek Spinach Pie

1/2 c Green onions, chopped
1 tb Butter
1 pk Spinach (chopped) thawed and drained
1 c Cottage cheese
1 c Milk
1/2 c Bisquick
3 Eggs
1 ts Lemon juice
1/4 ts Pepper
3 tb Parmesan cheese (grated)
1/4 ts Nutmeg

Cook onions in butter. mix in spinach. In greased dish layer spinach and cottage cheese. Put last 7 ingredients in blender and mix well. Pour over casserole. Bake at 350 degrees for about 35 minutes, until knife comes out clean.

~~ Microwave German Potato Salad

2 lb Red potatoes; cooked and sliced
3 Hard-cooked eggs; chopped
1/2 c Onion; chopped
1/2 c Celery; chopped
6 Bacon strips; diced
2 tb Sugar
4 ts All-purpose flour
2 tb Vinegar
1/2 ts Salt
1/8 ts Pepper
3/4 c Milk

In a large bowl, combine potatoes, eggs, onion and celery; set aside. Place bacon in a microwave-safe bowl; cover with a paper towel and microwave on high for 2 minutes. Stir. Microwave 3-4 minutes longer or until the bacon is crisp, stirring after each minute. Remove bacon to paper towel to drain; reserve 2 tablespoons drippings. Stir sugar, flour, vinegar, salt and pepper into drippings until smooth; gradually add milk. Microwave on high for 5-6 minutes, stirring every 2 minutes until thickened. Pour over potato mixture; toss. Top with bacon. Serve immediately. Yield: 8 servings

~~ Fettuccine With Garlic Shrimp

3/4 c Extra virgin olive oil
6 cl Garlic, sliced
1 Fresh red chile pepper, sliced
2 lb Large shrimp, shelled and deveined
4 Fresh basil leaves OR 1 ts Dried basil
Salt to taste
1 lb Fettuccine

Heat oil in frying pan. Add garlic, and chile; saute for 1 minute. Add shrimp and cook over medium-high heat until shrimp turns pink, about 3 minutes. Add basil and salt. Cook pasta according to package directions; drain. Place fettuccine in heated serving dish. Pour shrimp and oil remaining in pan on top; toss and serve piping hot.

~~ Kentucky Praline Popcorn

4 qt Popped popcorn, light salted
2 c Chopped pecans
3/4 c Butter
3/4 c Brown sugar

In large bowl or roaster, mix popcorn and pecans. Combine butter and brown sugar in sm saucepan. Heat, stirring popcorn mixture. Mix well to coat. Makes 4 qts.

~~ Little Round Cheesecakes

8 oz Cream cheese (2)
3/4 c Sugar
2 Eggs
1 ts Vanilla

Put vanilla wafer in bottom of cupcake foil. Pour mixture in, bake for 15 minutes on 350. Put in refrigerator overnight. Add fruit before you serve.

KAREN'S MUSINGS~ ~~

On Love

Love is all around me. It is in the gentle raindrops that nourish the flowers waiting to bloom. It's in the friendly face of a neighbor waving at me. I see it in the innocent eyes of my little dog as she follows along after me. I find it in the comforting hugs from people who care. It's the note I didn't expect in the mailbox or the chatty phone call from a friend far away. Love is the icing on the cake. The surprise in a box of Cracker Jacks. It's the peaceful calm just before I close my eyes to sleep. Love is the sunshine that filters softly through the window when I wake. It's a soft kiss. A compliment that makes me smile and warms my heart. There is nothing stronger than love. There is nothing I need more than love. Finally, there is no greater joy than giving love. It swirls around those who receive it and returns in ways I may never know.

YUMMMMMM...

~~ Hot Fudge Cake

1 cup all-purpose flour
3/4 cup sugar
6 tablespoons baking cocoa, divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup packed brown sugar
1 3/4 cups hot water

In a medium bowl, combine flour, sugar, 2 tablespoons cocoa, baking powder and salt. Stir in milk, oil and vanilla until smooth. Spread in an ungreased 9-inch square baking pan. Combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water over all; do not stir. Bake at 350 degrees for 35 to 40 minutes. Serve warm.
