Lasting Light Poetry April 4, 2003
A warm hello to all my readers. My latest offering is about the journey we're all on and I have used a lovely painting of a Carmel, California cottage by Thomas Kinkade. Please have a look.

Deja Vu or Maybe New ~ Life is made up of so many colorful threads that bind us all together. This is what I had in mind when I wrote "The Thread". It is a tribute to the human spirit and caring souls everywhere. ~ "Unchanging Love" is something we all crave and need. I wrote this poem when I felt more than a little overwhelmed with the uncertainties of life. The painting is favorite of mine by watercolor artist, Chuck Schenk. ~ Do you have someone in your life who you know is just meant for you? That's the way I felt when I wrote "Harmony". It's a lighthearted poem with beautiful graphics and a lilting song. I hope it lifts your spirits today. Enjoy!

Set up a ‘decoration station’ and let the fun begin.
With colourful candies and frostings, your little artists can create yummy masterpieces.
Try floppy-eared bunnies, flowers or colourful egg designs.
Ingredients:
3 1/3 cup All Purpose Flour Preparations:
Combine flour, baking powder and salt. Mix well.
Cream butter and sugar together on medium speed of electric mixer until blended. Beat in eggs and vanilla.
Stir in flour mixture. Mix well. Form dough into 2 balls. Wrap each in plastic wrap and chill about 3 hours for easy handling.
Roll dough out, one ball at a time, on a floured surface to 1/8" (3 mm) thickness. Cut into desired shapes like eggs and bunnies with floured cookie cutters. Place on ungreased cookie sheet. Sprinkle on coloured sugar before baking or leave plain and decorate later.
Bake at 375°F (190°C) for 7-10 minutes, or until light golden. Cool on sheet 5 minutes, then transfer to rack and cool completely.
Decorate attractively with icing and candies.
Makes: about 36 cookies

~~ Roasted Chicken and Potatoes ~ Posted by Pam
6 skinless boneless chicken breasts Heat oven to 350 degrees.
Spray a large baking dish with nonstick cooking spray. Place chicken and potatoes in baking dish and mix remaining ingredients except chives. Brush mayonnaise mixture over chicken and potatoes. Bake uncovered for 30-35 minutes or until chicken is no longer pink in center. Sprinkle with chives and serve.

~~ Marinated Veggie Salad
20 servings and good for potlucks ~ Posted by Dana
6 cups broccoli florets Whisk together in a small bowl the dressing mix, oil and vinegar; mixing well. Pour over salad and toss.
Refrigerate for at least 3 hours.
Makes 20 servings.

1 large jar of marshmallow fluff or cream
I can of Chinese noodles (the hard noodles)
In a large bowl, mix about 1/2 to 2/3 of the jar of marshmallow fluff and add the crunchy noodles. Mix well. With buttered fingers, press into cup cake tins and shape like birds nests. Put into the fridge all night and then add jellybeans or robin egg candy. Keep refrigerated or this WILL melt.

Note From Karen ~ April showers were the order of the day where I live. It was just enough to water the earth and make everything smell fresh. We have a brand new month and spring is in full swing. It is a time for rejoicing and for new beginnings. Those of us who are Christian believers will celebrate Christ's resurrection this month. ~ I am thinking that no matter what state the world is in, there is still a great need for joy. We have watched the events unfold in Iraq with a heavy heart. Let's all remember our troops and their families in prayer. ~ If you are feeling a bit down, I hope you'll take time to encourage someone else. I have found this is the quickest way to lift myself up. Share a smile and thanks for being on this journey with me. Be kind to each other. Shine on........Karen
