Lasting Light Poetry

Hello dear friends....I have a very special poem to share with you today. I want to thank my friend Sherry, who sent me the news article that prompted me to write this poem. I think it is one you might not soon forget. Please read the news story at the end of the poem, and the dedication to Tempest. I want to thank Sunny, for designing this beautiful page. I want to thank all of you for reading it. I hope it makes a difference in your life, or the life of someone you love.

RECIPES & REMEMBRANCES~ Here are some delicious recipes to try. All my newsletters are archived, and if any mistakes are made here, they are corrected there. I appreciate you letting me know if there is anything puzzling about any recipe found here. I will do everything I can to correct it. Let's cook!!

~~ Mushroom Chicken Saute for Two

1 teaspoon olive oil, divided
1 tablespoon butter or margarine, divided
2 skinned and boned chicken breast halves
Salt and pepper
8 ounces (about 3 cups) mushroom pieces (choose one or more from button, crimini, oyster, and shiitake)
2 green onions with tops, sliced
1/3 cup dry white wine

Heat half the olive oil and half the butter in 10-inch nonstick skillet over medium heat. Season chicken with salt and pepper; add to skillet. Cover and saute, turning once, until juices run clear, 10 to 15 minutes; remove and keep hot. Add rest of oil and butter to skillet over medium-high heat. Add mushrooms. Cook and toss 5 to 7 minutes until golden. Add onions and wine; cook 3 minutes. Season with salt and pepper. Spoon mixture over chicken.

Yield: 2 servings

~~ Taffy Apple Pizza

1 package refrigerated Pillsbury Sugar Cookie Dough
1 8-ounce package cream cheese, softened
1/3 cup brown sugar
1/4 cup peanut butter
1/2 teaspoon vanilla
Dash of cinnamon
2 to 3 apples, peeled, cored, and sliced
1/4 cup caramel ice cream topping
1/2 cup peanuts, chopped
Lemon juice to dip apples

Preheat oven to 350 degrees. Shape cookie dough into a ball and place it in the center of 15-inch baking stone or cookie sheet. Roll out until about 1/4 inch thick. Bake 16 to 18 minutes. Cool for 10 minutes. Loosen cookie from stone.

In a bowl, mix cream cheese, brown sugar, peanut butter, and vanilla well. Then spread mixture evenly over top of cooled cookie. Peel, core, and slice apples. Dip into lemon juice to keep fresh looking. Drain.

Arrange apples evenly over cream cheese mixture. Sprinkle with cinnamon. Heat caramel topping until warm. Drizzle over apples. Chop peanuts and sprinkle over apples.

Yield: 16 to 18 servings

~~ Seafood Enchiladas

1 tablespoon light (5 grams fat per tablespoon) margarine
1 onion, chopped
8 ounces crab
4 ounces tiny shrimp
1 cup reduced-fat sharp cheddar cheese, shredded
3/4 cup Monterey Jack cheese, shredded
6 fat-free 10-inch flour tortilla shells
1˝ tablespoons light margarine
1 cup 1 percent milk
1/2 cup light sour cream
1 teaspoon flour
1˝ teaspoons dried parsley
1/2 teaspoon garlic salt

Preheat oven to 350°. Lightly spray 13x9-inch baking dish with vegetable oil spray. In large skillet, melt 1 tablespoon light margarine; sauté onion until transparent. Remove skillet from heat; add crab and shrimp. Stir in 1/2 cup cheddar and 1/3 cup Monterey Jack. Put 1/2 cup of mixture onto each tortilla shell. Roll up and arrange in prepared baking dish, seam-side down.

In saucepan, melt 1˝ tablespoons light margarine. Whisk in milk, sour cream, flour, parsley and garlic salt. Whisk until blended and hot, not boiling. Pour over enchiladas; top with remaining cheeses. Bake at 350° for 30 minutes. Makes 6 servings.

~~ Chili Cheese Snacks

2 pkgs cream cheese softened (3 oz pkgs)
1 cup shredded cheddar
1/4 cup chopped green chilis
1/4 cup chopped ripe olives (drained)
2 tsps dried minced onion
1/4 tsp hot pepper sauce
2 tubes crescent rolls (8 oz tubes)

1. Beat cream cheese and then add cheddar, chilies, olives, onion, and hot pepper sauce
2. Separate each tube of crescent dough into four rectangles, press perforations to seal
3. Spread cheese mixture over dough, roll up jelly roll style (start with long side)
4. Cut each roll into 10 slices place on greased baking sheets
5. Bake at 400 degrees 8-10 minutes or until golden brown

~~ Coca-Cola Cake

1 cup butter or margarine, softened
2 cups all-purpose flour
1 3/4 cups sugar
3 tablespoons cocoa
1 teaspoon baking soda
1 teaspoon vanilla
2 eggs
1/2 cup buttermilk
1 cup Coca-Cola
1 1/2 cup miniature marshmallows

Combine all ingredients except marshmallows in large mixing bowl; blend at low speed in mixer. Blend well, then add marshmallows by hand. Pour batter into greased 13 x 9 inch pan; bake at 350 degrees F for 35 minutes or until toothpick comes out clean; cool 15 minutes and then spread icing.

Coca-Cola Icing:

1/2 cup butter or margarine
3 tablespoons cocoa
1/3 cup Coca-Cola
1 (1-pound) box confectioners sugar
1 cup chopped pecans

Combine all ingredients except pecans and beat until smooth. Then stir in the cup of pecans and spread on cake.
