Hello Again! It's good to have this time with you. I have a lovely painting of Cape Cod and a poem I hope will bring comforting thoughts to your mind. What could be better than sharing the end of the day with someone special. Please have a look at "You and I".

Deja Vu or Maybe New ~ "Here I'll Stand" is a poem I wrote during a challenging time in my life. I hope you'll find some courage and inspiration in it's words. There is also a lovely lighthouse painting by Thomas Kinkade. "Day is Done" is a tribute to our servicemen, and comes right from my heart. I'm pleased to share this with you again. I'm also including "Silent Night", which was in the last newsletter, but there was a simple error that made it difficult to access. I hope you enjoy this poem about being steadfast in the face of terrorism.

~~ BEEF AND CHICKEN FAJITAS ~ Posted by George

Makes 8 to 10 servings

2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon brown sugar
1 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon chipotle seasoning (optional)
1 cup Italian dressing
6 skinned and boned chicken breast halves
4 pounds flank steak
20 (8-inch) flour tortillas, warmed

Toppings: sour cream, shredded lettuce, chopped tomato, shredded Cheddar cheese

COMBINE first 6 ingredients and, if desired, chipotle seasoning.

STIR together chili powder mixture and dressing. Pour half of marinade in a shallow dish or large heavy-duty zip-top plastic bag; add chicken. Cover or seal. Pour remaining marinade in a separate shallow dish or large heavy-duty zip-top plastic bag; add beef. Cover or seal; chill chicken and beef 2 hours.

REMOVE chicken and beef from marinade, discarding marinade.

GRILL, covered with grill lid, over medium heat (300° to 350°) about 15 minutes on each side or until chicken is done and beef is at desired degree of doneness. Cut chicken and beef into strips. Serve in flour tortillas with desired toppings.

Prep: 20 min., Chill: 2 hrs., Grill: 30 min.

~~ SALSA PASTA SALAD ~ Posted by Joni

8 oz. pasta (elbows, small shells or rotini works well)
1 jar (24 oz.) salsa
1 can (15 oz.) black beans, rinsed and drained
1 medium green pepper, chopped
1 small onion, finely chopped
1 can (8 oz.) pitted ripe olives, drained and chopped or sliced
1/2 tsp. salt
1/8 tsp. pepper

Cook pasta according to package directions; drain and rinse in cold water. Place in a bowl; stir in the remaining ingredients. Cover and refrigerate for at least 30 minutes before serving.

~~ ORANGE-PECAN SCONES ~ Posted by Beatrice

2 cups self-rising flour
1/2 cup sugar
2 teaspoons grated orange rind
1/3 cup butter or margarine
1/2 cup buttermilk
1/4 cup fresh orange juice
1/2 cup chopped pecans
1 teaspoon vanilla extract
Sugar

COMBINE first 3 ingredients. Cut butter into flour mixture with a pastry blender until crumbly; add buttermilk and next 3 ingredients, stirring just until dry ingredients are moistened.

TURN dough out onto a lightly floured surface; knead 3 or 4 times.

DIVIDE dough in half; pat each portion into a 7-inch circle, and place on a lightly greased baking sheet. Cut each circle into 8 wedges; sprinkle evenly with sugar.

BAKE at 425° for 12 to 14 minutes or until golden brown. Yield: 16 scones.

Prep: 10 min., Bake: 14 min.

Note: Freeze scones up to 1 month. Thaw in refrigerator 8 hours. Bake scones at 350° for 10 minutes or until thoroughly heated.

~~ 24-Hour Strawberry Dessert ~ Posted by Joni

2 cups Fresh strawberries -- sliced
1 cup sour cream
2 tablespoons Brown sugar
Dash salt
1 cup Miniature marshmallows
Whole strawberries for garnish

Sprinkle strawberries with sugar and let stand 10 minutes. Fold marshmallows and sour cream into strawberry mixture. Add salt and mix gently. Place in a covered container and store in refrigerator overnight. To serve, spoon into individual serving dishes; garnish with a whole strawberry. NOTE: Cool Whip may be substituted for sour cream.

~~ Swiss Dijon Chicken Rolls ~ Posted by Karen

1 pound boneless, skinless chicken breast halves
3/4 cup shredded Jarlsberg light Swiss cheese*
6 tablespoons evaporated skim milk
4 tablespoons Dijon mustard
3/4 cup bread crumbs
4 tablespoons grated Parmesan cheese
2 teaspoons dried tarragon
Freshly ground black pepper

Preheat the oven to 375º. Lightly coat an 8" x 8" baking dish with no-stick spray. Place the chicken between pieces of wax paper or plastic wrap. With a meat mallet, pound to about 1/4-inch thickness. Place an equal amount of the Swiss cheese in the center of each breast. Set aside.

In a small bowl, mix the milk and mustard. Set aside.

In a medium bowl, combine the bread crumbs, Parmesan, tarragon and pepper to taste.

Roll up each chicken breast, beginning with the smaller end. Dip each roll into the milk mixture and then into the bread crumb mixture to coat completely. Place in the prepared baking dish with the rolled end down. Cover and bake for 30 minutes. Uncover and bake for 15 minutes more, or until golden.

*Or other part-skim Swiss cheese.

Note From Karen ~ First off, I'd like to wish all my Canadian friends a Happy Belated Victoria's Day. In this country we will be observing Memorial Day, and remembering those who gave their lives to protect and defend our nation. My prayers are with the families of all those who have lost friends and loved ones in the fight against terrorism which has become a part of the reality of our daily lives. Be kind to one another and remember we are all fighting a hard battle. Hope is alive and well. Shine on........Karen
