Hello Again ~ We have many holidays this month, but my favorite is Valentine's Day. I think you will enjoy the sheer delicacy of the painting I selected for this page. "Heart Dance" is dedicated to the magic of love and romance. I have used a song I am very fond of, and hope you will share this very special page with everyone you love. Enjoy.......

Deja Vu or Maybe New ~ I dedicate "Unchanging Love" to the Crew of the Columbia and to our nation. In these troubled times, we are all in need of comfort. ~ The joys of friendship are extolled in "Don't Let Go". I hope you have at least one friend who is always there for you. ~ "Rainbow Heart" remains a poem I still enjoy. It is a walk through the eyes of a child. Will you join me? Let's go...

Recipes From the Board ~ Here are some lovely recipes for Valentine's Day or any day. Our wonderful and creative cooks have posted some delicious offerings at Lasting Light Message Board. Let's Cook!

~~ Black Forest Cheesecake Squares ~ Posted by Pam

1 pk Fudge marble cake mix
1/4 c Oil
3 Eggs; divided
3 pk (8 oz.) cream cheese, softened
1/2 c Sugar
1/2 c Dairy sour cream
1/2 c Whipping cream
1 cn (21 oz.) cherry pie filling

Preheat oven to 350 degrees F. Grease 13 x 9 inch baking pan. Reserve 1 cup dry cake mix and swirl pouch; set aside. In large bowl, combine remaining cake mix, oil and 1 egg at low speed until dough forms. Press in bottom and 1 inch up sides of greased pan. Bake for 8 minutes.

In large bowl, beat cream cheese until smooth and creamy. Add 2 eggs, 1 at a time, beating well after each addition. Blend in reserved 1 cup cake mix, sugar, sour cream and whipping cream at low speed. Beat 3 minutes at medium speed until creamy.

Reserve 2 cups cheese mixture. Spoon remaining cheese mixture over crust. Add reserved swirl pouch to reserved cheese mixture; blend well. Spoon chocolate mixture evenly over cheese mixture.

Bake for 30-40 minutes until edges are set and center is almost set. Do not overbake. Run knife around sides of pan. Cool to room temperature on wire rack.

Spoon fruit filling evenly over top of cheesecake. Refrigerate several hours or overnight before serving. Store in refrigerator. Makes 48 bars.

~~ Peanut Butter Kiss Cookies ~ Posted by Beatrice

1 cup creamy peanut butter
1 cup vegetable shortening
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1/4 cup milk
2 teaspoons vanilla
3 1/2 cups sifted all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 package (11 oz.) package of chocolate kiss candies

Makes 7 Dozen Cookies

1. Preheat oven to 375°F
2. Cream together granulated sugar, brown sugar, shortening and peanut butter.
3. Add eggs, milk and vanilla; beat well.
4. Stir together flour, baking soda and salt; add to Jif mixture. Beat well.
5. Shape into 1-inch balls; roll in additional granulated sugar.
6. Place on ungreased cookie sheet. Bake for 8 minutes.
7.Remove from oven. Press a milk chocolate candy into the center of each warm cookie.
8. Return to oven; bake 3 minutes longer.

(Note: I've had these, and they are excellent. Wonderful for gifts!)

~~ Cashew Shrimp ~ Posted by Beatrice

1 tablespoon olive or vegetable oil
1 tablespoon oyster-flavored sauce
1 tablespoon soy sauce
1 tablespoon Chinese rice wine or dry sherry
1 teaspoon cornstarch
3/4 lb. large shrimp, peeled and deveined, with tails intact
1 carrot, thinly sliced diagonally
1/4 lb. snow peas, trimmed
1/4 cup sliced water chestnuts
Vegetable oil
3/4 cup unsalted, roasted cashews

In a mixing bowl, combine vegetable oil, oyster-flavored sauce, soy sauce, wine and cornstarch; stir until smooth.

Add shrimp, carrot, snow peas and water chestnuts; stir to coat evenly.

Brush black metal tray with vegetable oil. Spread shrimp mixture on tray.

Cook for 3 to 4 minutes at or until shrimp turn pink. Sprinkle with cashews.

Makes 4 servings.
