Hello Friends...Well, it looks like things are back on track! We certainly have a lot of catching up to do. First of all, I have a new poem called "Miracle", and if you or someone in your life needs one, take a look. I do believe in them!

~~ Asian Chicken Stir Fry ~ Serves 4

Ingredients:
1 Tbsp vegetable oil
4 skinless, boneless chicken breasts, cut into strips
1 can (10 3/4 oz.) Golden Mushroom Soup
3 Tbsp. soy sauce
1 tsp. garlic powder
Salt and pepper
1 bag (16 oz.) any frozen vegetable combination, thawed
4 cups hot cooked rice

Directions:
In medium skillet over medium-high heat, heat oil. Add chicken and stir-fry until no longer pink. Add soup, soy and garlic. Heat to a boil. Reduce heat to medium. Add thawed vegetables and cook until vegetables are tender-crisp, stirring often.

~~ Baked Ham with Walnut Peach Sauce ~ Serves 12

Ingredients:
1 half ham - about 4.5 lbs
1 cup Peach preserves
3/4 cup Peach nectar - half of an 11.5 ounce can
3/4 cup Low-sodium chicken broth
1 Tbsp Cornstarch
2 Tbsp Packed brown sugar
1/2 cup Chopped California walnuts Toasted
1/4 cup Dijon mustard
2 Tbsp Fresh lemon juice

Directions:
Preheat oven to 325 F. Put the ham in a shallow baking pan. With a sharp knife, score the ham in a diamond design. Add 1 cup of water to the bottom of the pan. Cover pan securely with foil and bake for 1 hour. Uncover the ham and brush with 1/2 cup of peach preserves. Bake uncovered, 30 minutes longer, basting occasionally.

Meanwhile make the sauce:
In a medium saucepan, combine the nectar, chicken broth and cornstarch and stir until smooth. Add remaining 1/2 cup of peach preserves and the brown sugar and bring to a boil, wisking occasionally. Simmer the sauce until thickened. Add the walnuts and peaches and simmer 1 minute longer. Whisk in the mustard, lemon juice and salt and pepper to taste.

~~ Shrimp and Shells ~ Serves 4

Ingredients:
1 lb. small seashell pasta, uncooked
1/2 lb. fresh snow peas
8-ozs. cooked medium shrimp
1 Tbsp extra-virgin olive oil
2 cloves garlic, minced
2 Tbsp fresh dill, chopped
1/2 cup parmesan cheese, freshly grated

Instructions:
Cook seashells, rinse with cool water and drain. Steam peas until crisp-tender. Combine shrimp, olive oil, garlic, and fresh dill in a large skillet and cook until hot. Add pasta, peas and parmesan cheese and toss to coat.

~~ Easy Microwave Portuguese Bean Soup

6 oz Portuguese sausage, thinly sliced
3 cups chopped cabbage
1 can (11.05 oz) bean with bacon soup
1 can (10.75 oz) tomoato soup
1 tablespoon dried onion flakes
2 cups water

In a 3-qt microwave-safe dish, combine all ingredients; mix well. Stirring occasionally, microwave on high power for 15 minutes. Makes 6 servings.

~~ Honey Apple Tea

Ingredients:
4 black tea bags
1/3 cup honey
3 cups unsweetened apple juice
3 cups boiling water
lemon slices

In a 2-quart pot, brew tea bags in boiling water. Remove bags; add honey and apple juice. Simmer until hot. Ladle into cups and garnish with lemon slices. Makes 6 to 8 servings.

~~ Butterscotch Crispies

Ingredients:
1 7 ounce jar marshmallow creme
1/3 cup margarine
2 cups butterscotch chips
5 cups crispy rice cereal
1 cup chopped pecans

Combine cereal and nuts in large mixing bowl. Set aside. In medium-size saucepan, combine margarine and marshmallow creme. Cook over medium heat until mixture reaches a boil, stirring constantly. Remove from heat. Add butterscotch morsels, stirring until melted. Quickly pour mixture over cereal and pecans. Stir until well coated. Press mixture evenly into a 15 1/2 x 10 1/2-inch pan coated with cooking spray or margarine. Chill until firm, about 1 hour. Cut into bars. Makes about 50 bars.

~~ Yukon Gold Rush Bars

2 1/2 cups of graham cracker crumbs
14 oz. can sweetened condensed milk
6 oz pkg. chocolate chips
1 tsp. vanilla
1 cup chopped walnuts or raisins

Combine all the ingredients in a bowl and mix well. Pour into a 9x9-inch square nonstick pan. Bake at 325 degrees for 30 minutes. Cool and cut into 16 pieces.
